  • Peel the bananas and soak them in diluted saltwater for 2 – 3 minutes. 
  • Take them out and add 350 grams of sugar, keep them in a cool place or the fridge for 8 hours.
  • Cook the soaked bananas on low heat until they are soft. Add 2 tablespoons of red wine and butter while cooking.

Step 2: Mix the bread mixture

  • Mix 800 ml of coconut milk, 100 grams of condensed milk, 2 eggs, 50 grams of wheat flour, 1 tablespoon of honey, a vanilla tube, and 1/4 tablespoon of salt in a large bowl. Then, add 300 grám of finely chopped bread and mix the mixture well.
  • Mix a little of the cooked banana juice with the bread mixture and stir to combine everything.

Step 3: Place the bananas in the mold

  • Put a layer of thinly sliced bananas at the bottom, followed by a layer of the bread mixture, and another layer of bananas.
  • Pour all the cooked banana juice from step 1 over the layers and put in the oven, which is set between 160 – 170 degrees in around 90 minutes.
  • A successful Vietnamese banana cake has a beautiful red-golden hue with a layer of bananas raised on the surface and soft inside.
