A legend says that when King Ly Anh Tong led his army into battle in the midst of a brutal war, he received a box containing a cake made by the Queen. Touched by the gift, he named it “phu the cake” to honor the love of all Vietnamese couples.

Another legend is associated with a village assembly held at Do Temple in Bac Ninh which welcomed King Ly Thanh Tong and the Queen. The locals gave a special cake to revere the presence of the King and Queen. Intrigued by the delicious treat, the King inquired about the bakers behind it. Learning that it was crafted by a young couple, he named it “phu the”. 

All these legends uphold the idea that phu the cake symbolizes loyalty and marital devotion. This is likely why the tradition of having a phu the cake in engagement ceremonies has become a cultural norm for Vietnamese people.

2.1. The origin of phu the cake

Dinh Bang Village in Bac Ninh Province, Northern Vietnam, is said to be the first place to make this Vietnamese symbol for love cake. Nowadays, if you have the opportunity to visit Do Temple, you will notice that this area has been preserving the tradition of phu the cake-making for hundreds of years, passed down from generation to generation.

2.2. The ingredients and features of phu the cake

Similar to many other Vietnamese rice cakes, phu the cake is not fussy about its appearance. This cake is crafted from simple ingredients like glutinous rice, green beans, shredded coconut, and lotus seeds. Yet, to achieve a perfectly fragrant delicacy, the baker must undergo numerous meticulous preparations. The cake, before being boiled, has a green color. Once cooked and peeled, it reveals a glossy yellow color and delicious taste.

Phu the cake is often used as an offering for engagement ceremonies. In some places, it is also served as a Vietnamese wedding dessert. This is because the cake’s shape symbolizes the Eastern philosophy of yin and yang. The dough is spread thinly, filled at one end, then folded over to cover the filling, representing the embracing of marital love.
