Phu Quoc sim wine typically has a shelf life of 2 years. To achieve its delicious and appealing taste, the wine must undergo a meticulous production process. Here are the steps involved in making this Phu Quoc wine:

• Harvest and prepare the sim fruit: Wash the sim fruit thoroughly, soak it in salt water for 30 minutes, remove the seeds, and let it dry.
• Choose the fermentation vessel: You can select a clay jar buried underground or a glass or porcelain jar. Ensure that the fermentation vessel is cleaned and dried before use to prevent cloudiness.
• Ferment the sim fruit with sugar: Use 1kg of sim fruit and 1kg of sugar. Spread a layer of sim fruit and a layer of sugar from the bottom of the jar up, with the top layer being sugar. Daily, shake the fermentation vessel and turn the sim fruit and sugar from top to bottom to allow even soaking without oxidation or cloudiness.
• Age the wine: After 10 days of fermenting the sim fruit, add 40-degree sticky rice wine directly into the jar with a ratio of 1kg of sim fruit to 4 liters of wine. Place the fermentation jar in a cool, dry place away from sunlight with an ideal temperature of around 23°C. Alternatively, if using a clay jar, bury it underground. After aging for 2-3 months, this special Phu Quoc wine is ready to be enjoyed at its finest.
